I was craving comfort food but didn’t want to go all out so I sautéed dinosaur kale with olive oil and garlic, tossing the pomegranate seeds in once the kale had cooked. Completing the meal was hard-boiled eggs and boiled potatoes. Delish!
Who knew I would have to go back east to confirm that I like pomegranates. During my holiday trip, a friend brought them to our family meal and I realized how sweet and perfectly astringent they are. They are also loaded with antioxidants and are heart healthy similar to grape juice and red wine but research shows even more so.
