I learned a lot from just a few weeks of eating on $4 per day. I am more in touch with how much food costs. Even now spending $30 at the grocery store feels decadent.

In order to stick to eating on$4 per day, I  modified this recipe from my friend Biz. The original recipe calls for maple syrup, which is costly and higher in sugar.

Eating on a Poverty Budget, Pseudo Kim-Chi

I made some pseudo Kim Chi or rather fermented cabbage. It’s not really a true Kim Chi because it is not made with Chinese or napa cabbage but rather regular green cabbage.
